In 2000, Gibbs made his NASCAR debut in the Craftsman Truck Series, driving the No. 18 Chevrolet with his brother JD. In 2001, he began racing full-time, finishing second twice and 10th in points the following year.
In 2003, Gibbs replaced Mike McLaughlin in the Busch Series, finishing second in the Rookie of the Year race to David Stremme. He gave notice of his retirement from football at the end of the season.
During the Truck Series race at Martinsville Speedway in 2002, Joe Gibbs Racing’s Coy Gibbs collided with Richard Childress Racing’s Kevin Harvick. Harvick made contact with Gibbs a few laps later on the restart, spinning him and ending his hopes of winning the race.
Coy Gibbs thought he could win the race by finishing third. Harvick was suspended for the remainder of the weekend after NASCAR reviewed his radio comments and fined him $35,000 for intentionally harming Gibbs.
After an altercation with Greg Biffle a month earlier, NASCAR found that Harvick had violated the terms of the probation on which he had been placed. Gibbs announced that Joe Gibbs Racing Motocross (JGRMX) was founded in 2007.
The NASCAR Cup Series teams are in Huntersville, North Carolina, less than a mile from the JGRMX race shop. Gibbs oversees the operation with support from motor industry veteran David Evans. For the 2012 season, the team signed drivers James Stewart and Davi Milsaps.

Gibbs is married to Heather Gibbs and they have four children: Case Gibbs, Jet Gibbs, Elle Gibbs and Ty Gibbs. Ty Gibbs is a professional stock car racer. Ty is a full-time NASCAR Xfinity Series driver for Joe Gibbs Racing in the No. 54 Toyota Supra. Gibbs won the 2021 ARCA Menards Series.
